My Banoffee

Our latest craze for dessert in the house is banoffee pie. Amazing how this simple dessert will fill up our fridge at least once a week. Like always I try to simplify and modify all my recipes. There are many such recipes on the internet; however there are no boundaries to making your very own banoffee. Here is mine:

Ingredients

Cocoa powder for dusting (you can use as much as you like, as the bitter taste does make a different)

1 tin of Nestle condensed milk (I choose to boil the whole tin unopened under medium heat for at least 2.5 hours, then let it cool down and you will get a superb caramel)

1 box of 150g digestive biscuits (put all in a zip plastic bag then crush the biscuits using a rolling pin)

3 tablespoon of butter (melted)

5 large bananas (I use the over ripped bananas as it has better taste)

1 packet of Philadelphia cream cheese and a small carton whip cream (simply whip them together until stiff)

Method

Mix the crushed digestive biscuits with the melted butter and press in a medium bowl. Put in the fridge for at least 20 minutes to set and chill.

Take the condensed milk, open the can and pour the caramel on top of the chilled biscuits. Peel and thinly slice the bananas, and arrange as you like over the caramel. Put this back in the fridge to chill for another 20 minutes.

Finally, spread the cream over the bananas and dust the cocoa powder over it. Chill again till you are ready to eat.
