Shrimp Paste Fried Rice

This is my little angel’s famous shrimp paste friend rice. Ever since she arrived all she wanted was rice, rice and more rice. Since I have cut down a lot of rice intake, so whatever rice that I cook will be for her.

She is so done with cereal for her breakfast, so whenever there is leftover of rice, she will either heat up the leftover to eat with her favorite soya sauce accompanied with a bull’s eye fried egg, or she will simply fry the rice. I will be forced to eat the fried rice with her, what I can tell you is that she does make fantastic fried rice.

Here is how she makes the shrimp paste fried rice. Simply pound half an onion with an inch of shrimp paste. She also adds a lot of mushrooms, spring onion, tomato and egg.

Heat up some cooking oil in a frying pan, once hot add the pounded ingredients and fry for approximately 3 minutes, add all the chopped vegetables, fry for a further 3 minutes and then add the rice (normally it is about one cup of rice), continue frying and add some fish sauce to taste. Bull’s eye the egg and put on top of the rice when serving.

It is so simple yet so tasty. This dish was taught to her by her eldest sister.
